Peach Crumble and cute ramekins
I used to have an issue with making desserts, and only when it came to serving size. That’s nice when you’re feeding a small party or a family of four, but for one, it’s not all that practical, or healthy. Not that I wouldn’t mind sitting there and eating a whole cake pan of brownies in a night. :p
So a while back, I bought a set of ramekins. And Kitchen Stuff Plus had these cute ones on sale, so I went for them. I love these.
Last night, I got a chance to actually bake something with it: delicious peach crumble!
The recipe is just something I adapted from a bunch of other recipes. Â It makes exactly two servings in two ramekins and is totally vegan. It’s not hard, unique or special, but I’m sharing for posterity:
- 3 peaches (the inspiration for this was that Ontario peaches were in season)
- 1/2 cup (plus 2 tbsp) of Brown sugar
- 1/3 cup of rolled oats
- 1/2 cup of flour
- 3 tbsp of vegan margarine
- 1 tsp cinnamon
- Preheat oven to 350° C
- Peel, pit and cut up peaches into chunks, mix with 2 tablespoons of brown sugar.
- Whisk together oats, 1/2 cup of brown sugar, flour and cinnamon
- Mix in margarine gradually until mixture becomes “crumbly”
- Top the peach chunks with crumble mixture.
- Place ramekins on a cookie sheet (or in my case I used a cake pan, because I don’t have a cookie sheet!) and bake for 25min.
Eat both servings. Or share with someone. Whatever.
